I have been looking around so excuse if this is repetitve

but is there a reccomended back up procedure for our original drive before we start the upgrade or replacemnt process?

With InstantCake, you do not need to perform a backup. Just leave the original drive intact, and save IT as a backup.

You can certainly do that; you can use mfstools to complete the backup procedure, but again, remember the InstantCake CD can be used as a backup, as well...
