But will I now be able to access my TiVo from my network? I have a USB to Ethernet adapter that is compatible with my TiVo.. I would assume I would still have to install the drivers for the adapter and setup my network configurations right? Is this done through Linux? Or is there on option in InstantCake for this?

We don't provide any networking support for Series2 units, so InstantCake does not provide this either. Check out dealdatabase.com for information on how to hack your Series2 unit for network access.
